Why is my radio (K3s) doing spit (or fake it)when NOT in Hound mode? When I turn off the split on the radio, split just comes back. VERY annoying.

Split on the rig has nothing to do with F/H. Split is recommended to avoid bandwidth limitations...with split operations you can transmit anywhere from 0-3000Hz no matter what your rig's bandwidth limit is.
You'll find the setting here: Settings/Radio "Split Operation" where you apparently have "Rig" selected.
Why do you find it annoying?

I think, 'Fake it' is the solution most operators prefer.

Apparently, I was not clear about the problem. I know why F/H requires an offset of the carrier frequency. This issue is that JTDX should only do this when the Hound button is depressed regardless of the setting on the settings/radio tab. The carrier frequency should NOT shift when the Hound button is NOT depressed.
OE1MWW: I do prefer the "fake it" method.
W9MDB: I find in annoying that I have to go into the settings every time I need F/H mode and switch the split operation from "none" to "fake it" and then back again when I'm done being a Hound.

HI the S (fake it) indication is related to the f/h frequency control but not subordinate. its function is to have an emission at the center of the TX filter: you will notice that with S (fake it) active and using TX frequencies in the 1500-1999 range there is no carrier offset. or not ? Neal-san, please read this section carefully. wsjt.sourceforge.io/wsjtx-doc/wsjtx-main-2.6.1.html#RADIOEspecially this part. Split Operation: Significant advantages result from using Split mode (separate VFOs for Rx and Tx) if your radio supports it. If it does not, WSJT-X can emulate such behavior. Either method will result in a cleaner transmitted signal, by keeping the Tx audio always in the range 1500 to 2000 Hz so that audio harmonics cannot pass through the Tx sideband filter. Select Rig to use the radio’s Split mode, or Fake It to have WSJT-X adjust the VFO frequency as needed, when T/R switching occurs. Choose None if you do not wish to use split operation. Could you make sure you understand exactly how Fake It works? And you will understand why you must always Fake It. Using Fake It means that the output will be stable even near the edges, and it will eliminate the transmission of overtone signals. You will finally understand that the "Split Operation" such as Fake It or RIG is not related to Fox and Hound mode. It is strongly recommended to select either Fake It or RIG to ensure rig output stability and to avoid interference to neighboring stations due to overtone signals. 73 Yoshi

The settings were confusing me a little but this should make it clearer.
Split=none means that JTDX feeds the transmitter with the audio frequency in the Tx box. If your transmit filter rolls off at 2700, then you can't use an FT8 frequency above 2650 or it will be hit by the filter edge. Not a good choice unless your radio doesn't have CI-V (CAT).
Split=rig means that the first time you transmit with a frequency outside of the 1500-2000 range, CIV will set the "VFO B" to a frequency that puts the audio in the 1500-2000 range. Going between T and R will have the transceiver run in split mode, so just going between T and R will swap VFOs.
Split=fake it means that CIV will change the frequency when you go between T and R (works with just one VFO) so again the audio stays in the 1500-2000 range.
The transmitted tone in the Wide Graph should not be impacted by that choice. In F/H mode, it will go below 1000 on transmit. Otherwise, it will stay where you put it or follow the other station, depending on the Rx/Tx split button.
